{"id":535,"date":"2013-02-04T20:25:16","date_gmt":"2013-02-05T04:25:16","guid":{"rendered":"https:\/\/heatofthekitchen.org\/?p=535"},"modified":"2014-07-31T14:32:14","modified_gmt":"2014-07-31T21:32:14","slug":"getting-to-the-source","status":"publish","type":"post","link":"https:\/\/heatofthekitchen.org\/?p=535","title":{"rendered":"Getting To The Source"},"content":{"rendered":"<figure style=\"width: 309px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/i0.wp.com\/heatofthekitchen.org\/wp-content\/uploads\/2013\/02\/curtido-jan-2013.jpg?ssl=1\"><img data-recalc-dims=\"1\" fetchpriority=\"high\" decoding=\"async\" class=\" \" alt=\"curtido jan 2013\" src=\"https:\/\/i0.wp.com\/heatofthekitchen.org\/wp-content\/uploads\/2013\/02\/curtido-jan-2013.jpg?resize=309%2C200&#038;ssl=1\" width=\"309\" height=\"200\" \/><\/a><figcaption class=\"wp-caption-text\">The closest we&#8217;ve been to carrots this week: Curtido for our enchiladas.<\/figcaption><\/figure>\n<p>We&#8217;ve been visiting restaurants this last week, it is something I always put aside as a special perk, until I realize how much value even the briefest time is to our students.\u00a0 Both chefs, Laurence Jossell of NOPA and Alexander Ong of Betelnut, reminded us again of that word: source.\u00a0 Getting the flavor right demands having a connection to the original ingredient, the source.\u00a0 Even to know what a good carrot tastes like, as Laurence puts it, becomes important.\u00a0 And the pairing of flavors at Alex&#8217;s restaurant obviously share that sentiment.<\/p>\n<p>The flavor of an ingredient may sound trivial to some, but what we heard was the connection to that flavor.\u00a0 Which made me think even more about the actual process of connecting to what we do.<\/p>\n<p>So much of what we deal with in daily life is surface oriented.
